CHICKEN with peanuts and tomato sauce – A la Cameroonaise
INGREDIENTS
4 onions, chopped
12 tomatoes, mixed
1 red bell pepper, sliced
3 garlic cloves, chopped
1 bay leaf
4 spicy chillies
1 chicken piece per person
rice
DESCRIPTION
1. Fry the chicken in olive oil till brown
2. Add blended fresh tomato sauce
3. Add onion, bell pepper, garlic, and chillies. Cook for 1h at medium heat
4. The last 15min add 250gr of peanut butter
5. Cook the rice
6. Serve with sliced pineapple and banana
CHUTNEY
1 onion, chilli flakes, and ginger
2 fruits
3 sugar, vinegar, garam masala
Simmer 1 hour
Till it looks like a jam
